Washing Lettuce for CDS

OSAP and South Kitchen Proposal
submitted by Adriane Dellorco 10/16/01

What?
OSAP would like to use the triple basin sink and one walk-in fridge on the North side of the South Dorm kitchen in order to wash its mesclun lettuce mix for CDS.

Who?
Julia Negele, a CDS Recycler, will oversee the washing of the produce with the help of two or three volunteers.
Gerry Gross, the head farmer at OSAP, will deliver the produce to the kitchen.
He will be the only person who will need to be issued a key because he may occasionally deliver after the bakery closes.
The delivery truck that distributes the baked goods from the bakery to the rest of the dining halls will deliver the 5-10 lb orders of mesclun to each dining hall.

When?
This will begin after Fall Break.
The deliveries of produce will occur on Wednesday and/or Thursday afternoons.
The washing of the produce will be done in the morning (probably around 10:00) on Thursday and/or Friday before the delivery truck comes to deliver the produce after lunch.
The washing is not expected to take more than 2 hours.

What else?
We need a key (possibly two, just in case) for Gerry to deliver the produce.
We need to communicate with the people that drive the delivery truck that they are going to pick up the produce and deliver it.
We need to inform the women in the bakery that this is going to occur.
We need to train Julia and the volunteers on how to wash the produce.
