Turkey Mignon with Velouté

Mashed Sweet Potatoes

Grilled Spring Vegetables

4 ounces Turkey creates a CO2e of 620 points.
4 ounces Sweet Potatoes = 120 CO2e points
4 ounces Vegetables = 100 CO2e points

We do not have the research to indicate how many CO2e points are created with 2 ounces of velouté, but a rough estimation would be 250 CO2e points.

A carbon point equals one gram of CO2e emissions of greenhouse gases. CO2e stands for carbon dioxide equivalent, which is an internationally accepted measure that expresses the amount of global warming from greenhouse gases. CO2e is not limited to carbon dioxide but also includes other greenhouse gases such as methane.
