Week of September 15, 2008

  • There is Low Carbon Day: Thursdays at Stevenson & Mondays at Dascomb.
  • One station will feature a Low Carbon Diet menu with carbon emission statistics.
  • This week the deli will have four varieties of cheese instead of six.
  • 2 fewer varieties of cheese served each meal period reduces CO-2e emissions of greenhouse gases by4,644 grams.



Week of September 15, 2008

  • A Weekly Low Carbon Initiative: Once a week, on Thursday at Stevenson and Tuesday at Dascomb will feature a station that models that low carbon diet. This week's low carbon pizza will be cheese-less. Each day that we do not serve a pizza with 8 ounces of cheese, 24,768 grams of CO2e emissions of greenhouse gases are not released.   • Stevenson: Between Sunday, 8/24 & Wednesday, 9/17, Stevenson ordered the following amount of fruit from Miller's Orchard, of Amherst, Ohio:

  • Peaches 3 tons
    Apples 2 tons
    Pears 1/2 tons
    Plums 1/4 tons
    Nectarines 1/2 tons

  • Peach, pear, plum and nectarine season is now over. Look for Miller's apple cider beginning next week.
  • Miller's Orchard had to press 32 tons of apples to provide the 2400 gallons served by Stevenson last year.

  • Did you know since 2004, CDS has been donating used food-grade oil to Full Circle Fuels, City Fresh and Calala's Water Haven to be
    re-processed as bio-fuel.
  • Did you know at the beginning of this year, CDS Catering Van is running on Bio-Diesel Fuel from Full Circle Fuels.

  • Did you know Oberlin has used Fair-Trade Coffee exclusively since 2001 = Pura Vida and Crooked River Coffee Company

Week of October 8, 2007

  • We have greatly reduced trans fats in all the Dining Halls.
  • It is our goal to eliminate all but naturally occurring trans fats by the end of the school year.

Week of October 1, 2007

  • All vegetable side dishes are prepared from scratch using fresh and seasonally local produce.
  • All beef and chicken dishes are prepared from fresh all natural meat (never frozen).

Week of September 14, 2007

  • In 2000 Oberlin College purchased approximately 5% of its total food budget locally.
  • In 2007 Oberlin College local purchases account for 40% the total food budget.
